Dining Spotlight of the Week: Diamond Pho
Welcome to the ninth edition of Dining Spotlight of the Week. This week I am taking the series to Vietnam for the first time, to Diamond Pho at Rainbow and Blue Diamond, the authentic pho spot that has quickly become one of my favorite comfort-food stops in the whole Southwest. If you love a rich, fragrant bowl of broth that warms you from the inside out, this is the place.

Your Local Guide
Nine editions into this series and we have eaten our way through Thai at Weera Thai on Rainbow, tonkatsu at Ton Ton Katsuya on Durango, hand-pulled noodles at Shang Artisan Noodle, wood-fired Mexican at Mijo, tacos from Villa's at the Durango Casino, ramen at Marufuku in The Bend, Korean BBQ at Master Kim's, and a proper steakhouse at Butcher & Thief. That is a lot of amazing food. So this week I am taking the series somewhere brand new: Vietnam, and the bowl that defines it, pho.
Diamond Pho at 9270 S Rainbow Blvd, Suite 120 sits right at the Rainbow and Blue Diamond intersection, in the heart of the Southwest. It is a newer spot that brands itself with a promise I love, "Authentic Vietnamese Pho: Refined broth, Premium taste," and it delivers on both. From Mountain's Edge, Rhodes Ranch, Southern Highlands, or Spanish Trail, you are minutes away. I have swung by after showings, after long days, and on lazy weekends, and it never misses.
The location is part of what makes it special. Rainbow and Blue Diamond is one of the busiest corners in our corner of the valley, right between the new homes going up in Rhodes Ranch and Mountain's Edge and the master-planned communities to the south. Diamond Pho is the kind of neighborhood restaurant that makes living here feel complete, a place you can count on for a great meal without driving across town. That is exactly the energy this whole area is building.

What Makes It Special
Let me start with the broth, because in pho the broth is everything. Diamond Pho's is rich, aromatic, and simmered for hours, the way a proper pho broth should be. It is deep and savory with that warm spice backbone of star anise, cinnamon, and charred ginger, and it is refined, meaning it is clear and balanced rather than murky or one-note. You taste the care in every spoonful.
Then there is the premium meat. The research behind this edition kept pointing to the same thing: Diamond Pho uses quality cuts, thin-sliced steak that cooks gently in the hot broth, tender brisket, shank, tendon, and beef meatballs, all served in generous portions. It is the difference between a quick pho fix and a real meal, and here you get the real meal.
The service is the part people keep mentioning, and I get it. The staff are warm, attentive, and fast, and reviewers consistently single out the hospitality, one manager named Lily especially, for making guests feel at home. It is that combination of great food and genuine welcome that turns a first visit into a regular spot. In a neighborhood full of new people moving in, that kind of hospitality matters.
Must-Try Dishes
I have worked my way through a good chunk of this menu, and here is what I order, and what I would tell a friend to order on their first visit:
Combination Pho (Pho Dac Biet)
The full experience. Steak, brisket, shank, tendon, and beef meatballs all in one bowl, the way pho was meant to be eaten. Every texture is here, silky noodles, tender meat, melt-in-your-mouth tendon, and that rich broth tying it all together. Around $24, and it is the bowl I order when I want everything.
Beef Pho
The classic, and the best test of any pho house. Thin-sliced steak cooks gently in the steaming broth right at your table, turning pink and tender as you add your herbs. Around $21, and it is the bowl I recommend to anyone trying Diamond Pho for the first time.
Com Tam Dac Biet (Saigon Special)
Broken rice topped with a grilled pork chop and an egg roll, the classic Saigon plate. The grill gives the pork that smoky char you cannot get anywhere else, and the broken rice soaks up every bit of the nuoc cham. Around $24, and proof this place is more than just pho.
Fresh Spring Rolls (Goi Cuon)
Light, cool, and packed with shrimp, pork, herbs, and vermicelli wrapped in delicate rice paper, served with a peanut hoisin dip. Around $12. They are the perfect start to any meal here, and they disappear fast.
BBQ Chicken Spring Rolls
A twist on the classic, with smoky grilled chicken inside instead of the traditional filling. The charred flavor against the cool herbs and crunchy vegetables is fantastic. Around $12, and a great pick if you want something a little different.
Banh Khot (Mini Savory Pancakes)
Crispy little coconut rice flour pancakes topped with shrimp, the fun, shareable snack you will not find at most places. Crunchy edges, tender centers, and a bright dipping sauce. Order these to start and your table will be happy.
Banh Xeo, Banh Mi, and Thai Tea
Do not skip the rest of the menu. Banh Xeo is the big Vietnamese sizzling pancake, crisp and golden, folded over shrimp and bean sprouts and meant to be wrapped in lettuce with herbs. The Banh Mi is a proper crusty baguette sandwich with all the right fillings. And the Thai Tea is sweet, creamy, and the perfect way to cool down after a hot bowl. As someone who loves Southeast Asian food and speaks the language, I can tell you this menu is the real thing.
The Vibe
Diamond Pho is cozy, clean, and welcoming, the kind of place where the staff remember you and the room feels like a neighborhood gathering spot. It is not fancy, and it does not try to be. It is comfortable, warm, and fast, which is exactly what you want from a great pho house.
Because it is open from 10 in the morning until 10 at night Tuesday through Sunday, it works for every part of the day. Grab a bowl for lunch after a morning of showings, stop in for an early dinner before a night out, or take it to go on a busy day. It is one of those restaurants that fits into your life rather than making you plan around it.
The steam rising off a fresh bowl, the basket of Thai basil and bean sprouts and lime on the side, the ritual of building each bite, it is comfort food in the truest sense. On a cool desert evening, there is nothing better in this corner of town.
Why This Matters for Southwest Las Vegas
Here is the part I care most about as a resident and as a Realtor. The Southwest is becoming one of the best places to eat in the whole valley, and a spot like Diamond Pho is a big part of that story. A few years ago, someone craving an authentic bowl of pho in this part of town would have had to drive to Spring Mountain or Chinatown. Now it is right here at Rainbow and Blue Diamond.
That matters for buyers. When I show homes in Rhodes Ranch, Mountain's Edge, Southern Highlands, and the communities south of the 215, one of the first questions is always about what is nearby. And the answer keeps getting better. Great restaurants, new roads, new parks, new construction, it all adds up to a neighborhood with a future, and that is what people are really buying into.
I have said it in earlier editions of this series and I will say it again: the food in Southwest Las Vegas now rivals, and in many ways beats, what Summerlin offers. Diamond Pho is another proof point. The Asian dining scene here, Thai, Korean, Japanese, and now Vietnamese, is as good as anywhere in the valley, and it is only growing. That is a huge win for everyone who calls this part of town home.
A Personal Take
I grew up around Southeast Asian food, and I speak Thai, so a great bowl of pho has always felt like home to me. There is something about that hot, fragrant broth and the ritual of adding fresh basil, lime, and a little hoisin and sriracha that slows you down and makes you appreciate the moment. Diamond Pho gives me that, and it is minutes from my house.
My favorite move is simple: start with the fresh spring rolls, order the Combination Pho, and finish with a Thai Tea. Then take the short drive home through the neighborhoods I know so well and remember why I love this part of Las Vegas. It is real food, made with care, in the community I live in and sell in every day.
If you are thinking about making Southwest Las Vegas home, I would love to walk you through our communities, show you the new construction happening across the corridor, and yes, take you to dinner afterward. Pho is non-negotiable. You will thank me later.
